SWEET POTATO, SQUASH AND TURKEY SAUTE

This was seriously a great one – pan wonder! Super flavorful and had a great play with all texture and not to mention easy! Plus, it had sweet potatoes…. I love sweet potatoes… I should probably call them ‘yams’ but they are still technically sweet potatoes. So, there you go. OK, enough of my rant on to the food!

What you need:
• 1 pkg. of ground turkey (1.25lbs. and I used 99% fat free)
• 12 oz. sweet potatoes (about 1 to 1½ medium sized)- chopped
• 5 oz. white or yellow onion – diced
• 5 oz. crookneck yellow squash (1 med. sized)- diced
• 3 oz. zucchini (about 1 small) – diced
• 1 Tbsp minced garlic
• 2 Tsp Paprika
• 1 Tsp cumin
• 1 Tsp Basil
• 1 Tsp garlic powder (yes, I LOVE garlic!)
• Salt and pepper to taste

How to make the magic happen:
1. Poke your potatoes, wrap them up in parchment paper or a paper towel, then steam them in the microwave for about 5-6 minutes.
2. While that is going, spray your pan and place on the stove over med. low heat. .
3. Sauté your garlic and onions down till they start to look slightly translucent.
4. Put in the turkey and the spices and mix so it is well coated. Make sure that you are constantly stirring to the turkey doesn’t over cook.
5. Once the potatoes are done coarsely chop them and throw them in with the turkey. Let it cook for about 2 -3 minutes.
6. Then add the squash and zucchini.
7. Continue to mix well for about 3 or so minutes. Then reduce to simmer and cover, stirring occasionally.
• At this point it is ready to serve but I will say that with this meal (as well as many others) is one of those that the longer you let it simmer and let the spices and flavors mingle the more flavorful it will be.
