The Cauliflower… it’s everywhere now. You cannot get away from it. If you are spending any time looking up ways to make your eating healthier or improved in various ways you will see cauliflower being used in place of a bunch of items like rice, potatoes, and bread… thus the pizza crust.
There are literally hundreds (and I’ve looked) of recipes on how to make this and each one is slightly different with everyone having their own style/pizzazz, so to speak. This recipe below is mine and because it is summer, I wanted to see if we could make them on the BBQ vs. in the house with a hot oven!

What you will need:
1 small head of cauliflower
2 whole eggs (I used egg whites but the yolk helps bind the cauliflower together)
1 Tbsp of Coconut Flour
1 Tbsp ground flax seed
1 – 2 tbsp of garlic powder (I love garlic!)
1 Tbsp Basil
1 Tsp Rosemary
1 Tsp Thyme

What to do:
1. Wash, clean, and dry your cauliflower. Chop into pieces and place in the food processor. Transfer into a mixing bowl until all the cauliflower is in rice like form.
2. Add the coconut flour, the flax, spices, and 2 eggs. Mix together. (The great thing is these are basic seasonings, so, you can add paprika, Italian spices, etc.) Stir together until everything is mixed evenly.
3. Preheat your BBQ to Med. High heat. While it’s warming up, take foil and spray it down so these beauties don’t stick. Taking a ½ cup measurer, fill it with the mix and place into your hands and squeeze tightly to make a ball form. Place on the foil and press flat but NOT thin. Keep the edges thicker. Make sure to keep them well spaced.
4. Depending on the size of your BBQ this may be broken up a bit for timing. Once you have your mini Pizza crusts formed take out and place on the BBQ for 18-20 mins. (I kept mine about 18 mins.)
5. Prep your toppings here. I used what I had in the house… didn’t want to go to the store… but I used goat cheese, mini bell peppers, turkey meat and mini tomatoes.
6. Bring your topping out when you go to flip them. (Note: be easy on these little fellas! They are fragile! ) Once you flip them place your toppings on the pizzas and let cook for about 12-15 mins. Depends on the intensity of your BBQ and honestly how “done” you like them… I like a little black on mine so I went more on the longer side.
7. Once they are done put them one some plate and dish them up! They are light but delish!
